Coconut Bites

These little goodies are wonderful to carry with you on trips, just pop them in a little cold pack and you are ready to go. On my recent trip, everyone else was picking up sweet treats from the wide variety of chocolate shops. But with these little babies I was temptation-free, and completely satisfied!

1-1/2 cups coconut flakes
1/2 cup Agave
2 Tbsp raw Almond butter
1/3 cup raw cacao powder
1/3 cup raw carob powder
1/8 tsp Vanilla Powder
pinch of Himalayan salt
1 Tbsp Sunflower lecithin
1/4 cup melted Coconut Oil
Extra coconut flakes for coating
  • Start by melting the coconut oil (either heat in a dehydrator, or melt in a jar sitting in a bowl of warm water)
  • Mix ingredients (except lecithin and coconut oil) together in a bowl
  • When other ingredients are combined, then add melted coconut oil and lecithin to the bowl and mix again 
  • Form into bite-sized balls with your hands - and dip in coconut flakes to coat
  • Put in fridge or freezer to set, and store covered in the fridge

Tribest Blender

Latest addition to my kitchen - a Tribest personal blender! I have been wanting one of these for quite awhile, and since I will be travelling soon the timing is perfect.

While my Vitamix is amazing, taking it with me when travelling is not something I look forward to. But I do need a blender to continue making my smoothies, dressings, soups and other raw food delights while away. This seems to fit the bill for me.

So far I have made salad dressings and even creamy zucchini soup. And today I made an Orange Miso dressing in the Tribest blender. I just added a small whole orange that was peeled and seeded, 2 Tbsp Miso, 1/4 cup Olive Oil, 1 Tbsp Lemon juice and blended.

Double Orange Green Smoothie

The Birthday girl has already heard from from her son Jason and daughter Shanna - and as always I am one proud and happy Mom!

My son and his family live in Ontario, Keegan is 8, and Mackenna who is 4 sang her beautiful version of the Happy Birthday song to me over the phone - a very special gift for her lucky Grannie!

So here's the result of feeling sunny, light and joyful today - a Double Orange GS - the perfect way to start out my day!

Double Orange GS
Double Orange GS
2 cups water
2 oranges, peeled and seeded
1 banana, peeled
1 cup Alfalfa sprouts
1 large handful Spinach
1 large chunk Ginger, peeled
1-1/2 Tbsp Chia seeds
  • Adding the water, oranges, and banana to the blender first makes for easier blending if you are using a regular blender - I use a Vitamix
  • To this liquid blend, add the sprouts, spinach and ginger, and blend again until smooth and creamy
  • Add Chia seeds last and only blend for a few seconds
  • Let GS sit in blender for 5-10 minutes while the Chia seeds absorb liquid and swell up to thicken the GS
  • If blended on high speed, the Chia seeds will break into a grit that catches in your throat

Mango Kiwi Kale Green Smoothie

If you have already discovered that Kale can taste a little too green when you add it to a Green Smoothie...here is one for you to try!

Mango Kiwi Kale GS
Yield:  1 Litre

2 cups water
1 large Atoulfo Mango, peeled and seeded
1 banana, peeled
2 Kiwi fruit, peeled
Splash of fresh lemon juice
4 leaves of Kale
  • Add first 5 ingredients to blender, blending into a liquid
  • Remove and discard centre stem from Kale leaves - add remaining leaves to blender
  • Blend all together until smooth
  • The GS will be nice and thick - you can always add water to thin it out
  • Fresh lemon juice counters too green a flavour - so always taste test and add more as needed
  • This was made in a Vitamix blender which gives a velvety texture
  • If using a regular blender some Kale bits may remain, try blending longer

Recipe - Mango Pudding

Here is a simple recipe that can be whipped up quickly and easily in your blender! When you want a tasty dessert without all the fuss - this one fits the bill! 

MANGO PUDDING 
Yield:  two 1 cup servings
 
2 mangos
2 bananas
2 slices of dried mango, soaked
2 Medjool dates, soaked
Shredded coconut for garnish
  • Remove pit from dates and soak 15 minutes, drain
  • Chop dried mango into pieces and soak 15 minutes, drain
  • Peel mangos discarding peel and seed
  • Set aside some chopped fresh mango (for the bottom of each dessert dish)
  • Remove and discard banana peel - place bananas and mangos in blender - blending these 2 ingredients first before adding the rest
  • Add dried mangos and dates that have been soaked to blender
  • Blend all together until mixture is smooth and very thick
  • Place equal amounts of chopped fresh mango into bottom of each dish
  • Pour pudding over chopped mango and sprinkle coconut (or more chopped mango) on top as a garnish
  • Refrigerate 2 hours or until chilled to set
