Mango Lime Granadilla Pudding

While in Costa Rica  I'm sampling the fruit - and this is my new favourite! The seeds inside are a lemony sweet delight. Granadilla is sweet Passion Fruit and its seeds are used mostly in ice cream, yogurts, juice, drinks, jam, and all kind of desserts are based on this fruit.


Mango Lime Granadilla Pudding
Yield:  1-1/2 to 2 cups
 

1-1/2 cups mango, chopped
2 dried mango slices, chopped
2 limes, juiced
2 large Granadilla, seeds only
  • Peel the mango, remove pit, and chop flesh into cubes 
  • Add all ingredients to a blender and blend until desired texture is reached
  • Place in the fridge for an hour to set - enjoy!

Looks lovely - great idea. you are so innovative. actually, grenadillas are sold here in Thrifty's - I'm going to try this. Terrific photo!

Thanks Pat, will buy some when (if ever) I come home. Just made up a batch for a raw food class I am teaching tomorrow in Costa Rica!
